What Vegetarian Eat- Mexicanish Bits and Bobs on Bread

This was SO good, I've actually started making the refried beans in a big batch to always have in the fridge! It was a grab what you want and put it on bread inspired by ohdeardrea, seriously go check her out, heaps of vege inspiration!
Top left: Green bean salad, steamed green beans, chopped onion, salt, pepper, vinegar and olive oil.
Top right: Avocado.
Bottom right: Cream cheese, pickled beetroot and grated carrot.
Middle: Re-fried beans. I fried some onion, garlic and cumin, added a tin of cannelini beans and a little stock and cooked until it was mushy. I then mashed it a bit with a fork too.
Top right: Lentil salad. I cooked off a tin of lentils with garlic, balsamic vinegar, olive oil and cherry tomatoes.

My kids love these sort of meals where you help yourself. They will at least try a little of everything and then if they like it they can go back for more!

What Vegetarians Eat- Healthy Nachos!

This was the only pic I got of this meal! And I was lucky to get this, because it disappeared REALLY quick!
This one is a perfect "Oh crap what am I going to make for dinner, it's too bloody hot!' meal. Quick, easy, tasty and healthy!

Make some pita chips by cutting pita bread into triangles and popping them in the oven until they become hard and crisp.
Sprinkle cheese over the top and put back in the oven to melt the cheese.
Layer chopped tomato, chopped green capsicum, avocado, yoghurt and kidney bean salsa (kidney beans with lemon juice, seasoning and cumin mixed together and left to sit for about an hour).
DONE!
Sean and I also added chopped lettuce and sweet chilli sauce to ours. This is very quickly becoming my go to meal lately! In fact I may do this one tonight! 44C means no cooking!

What Vegetarians Eat...

So this post, and hopefully series. is inspired by three things.
1. A friend of mine has started a summer salad series over on her blog rosiesaysrelax.com (go check her out for a bit of beautiful bits and pieces eye candy!)
2. Over the years I've received the question "You're vegetarian...what do you eat?!?!" more times than I can count.
3. I have a few friends that are on a vegetarian/healthier/natural food path and have asked me where I get my recipes from.
So I'm aiming to answer the two questions!
In general I don't follow recipes. I'm more of a fly by the seat of my pants cook. I throw in what I feel goes. Either that or I tweak recipes. Sometimes meat recipes are tweaked and sometimes vegetarian ones. 

This particular meal was very much a fly by the seat of my pants affair...

 (excuse the blurriness!)
Chickpeas
Sultanas
Carrot
Slivered Almonds
Corn (you don't have to use fresh, I just happened to have some from my delivery that week. Tinned or defrosted works just as well)
Silverbeet (again substitute with spinach, curly kale, whatever is on hand)

Cumin
Tumeric
Garlic
Sea Salt
Pepper
Mix all the above with some precooked rice and voila! Chickpea and Rice Salad!
I don't really have any measurements for any of my ingredients, just add to taste. You can omit things if you don't like them, or add them if you think they'll improve the dish! That's what's so great about cooking like this. Anything goes!
And by the way feel free to add meat too if you want. This is great as a complete meal, but would also be a great side salad at a BBQ. Just make sure it's free range though ;)
